Vegetable Broth, Originally Known as Bieler’s Healing Broth

This healing vegetable broth recipe is from the original Bieler’s broth. It was popularized in the 1920’s when it was used as the “tonic for the Hollywood stars”, as prescribed by Dr. Henry Bieler.

Dr. Henry Bieler created this vitamin and nutrient rich soup to heal his patients.  Dr. Bieler and countless after him have successfully used the potassium broth to rejuvenate the sick and to use as a cleansing broth during fasting.  Drinking just broth provides the body with the electrolytes to conduct a safe fast while taking the strain off the digestive system.

Bieler’s broth specifically contains potato skins, zucchini and string beans, which are rich sources of ionic potassium , sodium and other alkaline electrolytes. The liver and other organ’s use those elements to clean and revitalize the body and support the blood levels of these electrolytes.

Below is my standard veggie broth recipe, best if you don’t wish to use any animal products and/or you wish to recycle some of the vegetable pulp that you have leftover from your homemade veggie juicing. Veggie broth can be used in any recipe calling for standard chicken broth and is great to cook grains in place of water.

Vegetable Potassium Broth or Bieler's Broth

This is your standard veggie broth, best to make if you don't wish to use any animal products and/or you wish to recycle some of the vegetable pulp that you have leftover from your homemade veggie juicing. Veggie broth can be used in any recipe calling for standard chicken broth and is great to cook grains in place of water.

Ingredients
  • 1 gallon filtered water
  • YOUR LEFTOVER PULP from VEGGIE JUICING
  • OR ... 4 lbs chopped/grated veggies of any types or quantities, such as:
    thick potato skins
    yam or sweet potato skins
    carrots
    rutabagas
    turnips
    celery
    zucchini
    green beans
    summer squash
    onion
    parsley and cilantro
    greens of all types
Instructions
  1. Place the veggies in a large soup pot and cover with water (about one gallon.)
  2. Bring to a boil, cover, reduce heat and let simmer for 2-3 hours.
  3. Allow to cool, strain off the water from the veggies and pour into quart or gallon jars. Use this broth as the basis for soup recipes, sautéing vegetables, and cooking beans and grains.
  4. SLOW COOKER VERSION: Put the veggies and water in a crock pot and let cook on high for 6 hours.
Notes
PACKING & STORING YOUR BROTH: Wait until your broth is cooled before pouring it in any container other than glass. If you use glass and you plan to freeze it, don't fill the jar all the way. Once cooled, I like to store my broth in freezer zip-lock bags in the size of 2 cups. This makes for easily pulling out just enough for cooking my grains, or a couple bags if I'm making soup. You may also choose to freeze your broth in ice cubes for smaller servings.
