For Mayo Almost As Good As “Best Foods” – But Way Better For You

Use your homemade mayo to make your next sandwich!

Some of you might have known that I was a “mayo-aholic” as a kid. Sure shootin’!  Instead of sticking my hand in the cookie jar I dunked it in the mayonnaise jar! Well I can honestly say this is no Best Foods but this is just as darn good as it is gonna get! Not to mention a whole lot more healthy for you than the high oxidative capacity of soybean oil high in polyunsaturated fatty acids.

Some of you might have known that I was a “mayo-aholic” as a kid- Sure shootin- instead of sticking my hand in the cookie jar I dunked it in the mayonnaise jar. Well I can honestly say this is no Best Foods but this is just as darn good as it is gonna get! (Not to mention a whole lot more healthy for you than the high oxidative capacity of soybean oil high in polyunsaturated fatty acids).
Ingredients
  • 1 large free range organic egg*
  • 4 tsps rice or distilled or apple cider vinegar (I like taste of distilled best)
  • 1 ½ tsps water
  • 1 tsp fresh lemon juice
  • ½ tsp sea salt
  • ¼ tsp raw honey
  • 1 cup "light" olive oil
Instructions
  1. Put the egg, vinegar, water, lemon juice, honey, and salt in a blender or food processor and blend until smooth. With the motor running on low add the oil in a thin stream through the hole in the top of the blender and blend until it thickens (about 3 minutes). You will need to increase the speed of the blender to medium as the mayo thickens. Keep in the fridge for up to a week.
Notes
*To reduce the risk of salmonella use only free range organic eggs. Clean the shells with soap and water before using. Do not use eggs with cracked or broken shells.
